Vegan Scrambled Eggs

This wonderful dish is one of the most popular child-friendly dishes not only in Italy.

It is definitely one of the top 3 in our family, too. It is prepared in a flash, does not require many ingredients and can still shine with a lot of flavor.

In addition, the tofu it contains makes the dish a very good and easy way to provide children with sufficient protein.


  • 400 g natural soft tofu
  • 1 tbsp mild sunflower oil
  • ½ teaspoon turmeric
  • 1 tbsp still mineral water
  • 1 ½ tbsp white almond butter
  • iodized sea salt
  • black pepper from the mill
  • 1 tbsp Butter
  • Chive rolls and diced capsicum for garnish
  • Kala Namak (black himalayan salt), optional but highly recommended!
  • Some nice fresh bread, optional


Step 1

Crumble tofu with a fork.

Step 2

Heat sunflower oil in a pan and fry the tofu with turmeric for about 3 minutes.

Step 3

Add the mineral water and almond butter, season with salt and pepper and Kala Namak.

Step 4

Stir in the butter and serve the tofu scrambled eggs garnished with a few chives and capsicum cubes.
