Carrot Lasagne

This wonderful dish is one of the most popular child-friendly dishes not only in Italy.

The portions are really filling. With a large salad it is definitely enough for 3 - 4 people. This lasagna is very simple and low in calories.

Ingredients:

  • 300 g carrots, in pieces
  • 10 g of olive oil
  • 1.5 cans of diced tomatoes
  • 1.5 teaspoons salt
  • 1/2 teaspoons pepper
  • 1 teaspoon curry
  • 1 teaspoon vegetable stock powder, or homemade paste
  • 1 pinch of sugar
  • 200 g vegan cream cheese
  • 1-2 tablespoons basil, chopped
  • 5 lasagna sheets

Preparation:

Step 1

Put the carrots into a food processor and mince them for around 5 seconds

Step 2

Put carrots into a saucepan, add olive oil and let it simmer for 2.5 minutes

Step 3

Add tomatoes, spices, vegetable stock and sugar and cook for approx. 6 min

Step 4

Add cream cheese and Basil and cook for approx 2 minutes

Step 5

Then layer the mixture with the lasagne sheets in a casserole dish. Start with a layer of tomato and carrot sauce and also finish with it.

Step 6

Bake in preheated oven at 200 ° C for approx. 40 minutes (fan-forced oven: 180 ° C)
